How TO Make Cream Of Broccoli Soup

  1. Wash the broccoli and cut it into small pieces or small flowerets.
  2. Heat the butter in a medium stainless steel saucepan, and add the onion and garlic. Stir over medium heat until the onion is golden brown.
  3. Add the pepper and broccoli. Stir until broccoli gets a fresh look and absorbs the onion taste.
  4. Sprinkle the flour over the broccoli and stir.
  5. Add the bay leaves, salt, broth, oregano, and pepper. Stir until mixed.
  6. Leave the broth over medium heat until it boils.
  7. Reduce heat and simmer for 12-15 minutes until broccoli is soft.
  8. Discard the bay leaves. Keep some broccoli flowerets for garnishing.
  9. Place the broccoli in a blender container and blend until the mixture is soft.
  10. Pour the soup back into the saucepan and reheat.
  11. Beat the egg yolk and cream well. Add to the soup while stirring constantly.
  12. Ladle the soup into a serving bowl. Garnish with broccoli flowerets and serve while hot.

Notes

  1. Do not discard the broccoli stalk, remove the peel from the dry part, then chop it into small pieces, and use it in soup
  2. When you add the egg yolk to the hot soup, the egg yolk may become crumbly due to the consistency of the yolk protein. To avoid this phenomenon, I advise you to mix the yolk with the cream, and you should also stir the soup constantly while adding the yolk
  3. For more vitamins and minerals, add some freshly chopped spinach leaves to your soup.
  4. Adding cream as desired, gives a wonderful texture and delicious taste to the soup, and it can be replaced with milk to reduce fat
  5. For more fiber, you can add some oat flakes instead of flour.

  • ½ teaspoon Oregano dried
  • ¼ Teaspoon Black pepper ground
  • 1-2 Large Egg yolks
  • ½ Cup Cream
