  6. 2 tbsp. melted butter
  7. 2 teaspoons minced garlic
  8. 1 tablespoon flour (all-purpose)
  9. 1 quart of thick cream
  10. 1/2/ c. chicken stock (or reserved hot pasta water)
  11. 1/4 cup freshly grated Parmesan cheese
  12. 1/4 teaspoon kosher salt (or to taste)
  13. 1/4 teaspoon black pepper, ground (or to taste)
  14. 1 teaspoon parsley (fresh) (optional, for garnish)

INSTRUCTIONS

  • Over medium-high heat, bring a large pot of salted water to a boil. Cook until penne pasta is al dente, about 8-10 minutes, according to package recommendations. 1/2 cup of the hot pasta water should be set aside in a bowl (if used instead of chicken stock). Drain and set aside the pasta.
  • Dry the chicken breasts completely with a paper towel. Salt & pepper to taste.
  • Heat oil in a large skillet over medium-high heat until it sizzles, about 1-2 minutes. Sear the chicken for 6-8 minutes per side, or until golden brown. To keep the chicken moist, slice it into 1/2/-inch strips, put it on a platter, and cover it with aluminum foil.
