Ingredients
  

  • ¼ cup balsamic vinegar
  • 4 tbsp olive oil divided
  • 1 tbsp. red wine vinegar
  • 1 tsp honey
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper ground
  • 4 boneless chicken thighs
  • 1 finely sliced red onion
  • ¼ cup fresh or frozen cranberries
  • 4-6 tarragon sprigs

Instructions
 

  • Stir balsamic vinegar, 2 Tablespoons olive oil, red wine vinegar, honey, salt, and pepper in a medium mixing basin.
  • Toss the chicken thighs in the marinade to coat. Refrigerate the bowl for 30 minutes to overnight to marinate.
  • Preheat the oven to 425 degrees Fahrenheit.
  • Brush the remaining 2 Tablespoons of olive oil onto a rimmed baking sheet. Then, arrange the red onions in a uniform layer and spread the chicken thighs between them, pouring the remaining marinade over the onions. Add the cranberries and garnish with a few sprigs of fresh tarragon.
  • Roast for 20 to 25 minutes, or until the chicken juices run clear (when the thickest part of the thigh reads at least 165 F on a meat thermometer).
  • Serve right away.
