Ingredients for creamy Tuscan chicken

for 4 people
  1. 4 skin-on, bone-in chicken thighs
  2. 2 tsp. salt (for the chicken)
  3. 1 tsp. black pepper, for the chicken
  4. 1 tablespoon of olive oil
  5. 3 garlic cloves, chopped
  6. 1/2 onion (diced)
  7. 1 diced tomato
  8. 2 quarts of spinach
  9. 2 quarts of thick cream
  10. 1 teaspoon kosher salt
  11. 1 teaspoon of black pepper
  12. 1/2 cup parmesan cheese, grated
  13. 2 tablespoons chopped fresh flat-leaf parsley
 

Instructions for creamy Tuscan chicken

  • Season the chicken all over with salt and pepper.
  • Heat the oil in a skillet over medium-low heat.
  • Cook the skin-side down chicken thighs in the skillet for about 13 minutes to crisp up the skin. To ensure that the chicken cooks evenly, move it about from time to time. To the touch, the skin should be hard.
  • Cook for another 15 minutes, or until the chicken is cooked through on the opposite side. Remove the pan from the heat.
  • Add the garlic and onion and stir until the onions are translucent. Stir in the tomatoes and spinach until the spinach has wilted, about 2 minutes.
  • Bring to a boil with the heavy cream, salt, and pepper.
  • Directly add the Parmesan cheese and parsley and stir until the sauce has thickened slightly. Place the chicken back in the pan and ladle the sauce over the top.
