Lavender’s applications are simply limited by your imagination. The flavor of lavender is sweet and flowery, with lemon and citrus notes. The strength of lavender blossoms increases as they dry.

Ingredients
  

  • 1 cup of sugar
  • 2 c. water
  • 1 tbsp. lavender flowers
  • 2 ½ tbsp lemon juice freshly squeezed
  • 2 tbsp vodka

Instructions
 

  • Combine sugar and water in a medium saucepan over medium heat until the sugar melts.
  • Place the lavender flowers on top.
  • Stir until the mixture comes to a boil, then reduce to low heat and continue to cook for 5 minutes. Remove from the heat, cover, and set aside for 10 minutes.
  • Pour the syrup mixture through a fine strainer over a big bowl (straining out the lavender flowers).
  • Stir in the lemon juice and vodka to the filtered syrup mixture until fully combined.
  • NOTE: The secret to a soft sorbet is vodka (or any other form of alcohol). Alcohol does not freeze, and a small amount prevents the sorbet from freezing. Vodka is a fantastic choice because it has no effect on the taste.
  • Place the mixture in an ice cream maker and process according to the manufacturer’s directions. Pour into a container, cover, and place the mixture in the freezer. When it’s semi-solid, mash it up with a fork and refreeze once more.
  • Once frozen, transfer to a food processor or blender and puree until smooth. Cover and place in the freezer until ready to serve.

Notes

  • Lavender Sorbet, Use dried lavender flowers in place of fresh lavender flowers when cooking with lavender.
  • If you use too much lavender in your recipe, it will taste like perfume and will turn your food bitter. Because lavender has such a powerful flavor, a small amount goes a long way.
