You’ll need a handful of veggies and pantry ingredients to make the dressing! Here’s everything you need: chickpeas, Eggplant, Potato, Lettuce, Onion, Cucumbers, Yoghurt, Mayonnaise, Garlic, White pepper, Lemon juice, Hot pepper, Sumac, Parsley

How To Make Mediterranean Chickpeas Salad

  1. In a deep frying pan, place the corn oil ( 2cm ). Heat over medium heat.
  2. Fry the bread cubes until golden brown. Remove with a slotted spoon. Place on a paper towel to get rid of extra oil.
  3. In the same oil, fry the potatoes until golden brown. Fry the eggplant as well. Let it cool.
  4. On a serving plate, arrange the lettuce, half of the onion, cucumber, and bread.
  5. Add the potatoes, eggplant, the rest of the cucumber, and bread.
  6. Add the chickpeas and corn. Add the rest of the onion.
  7. The sauce in a large bowl, and place the yogurt, mayonnaise, garlic, white pepper, lemon juice, and chilies. Beat with a fork until well blended. Pour over the salad.
  8. Garnish with sumac and parsley. Serve at once.

 

Notes

  1. To reduce the fat, you can toast the bread in the oven.
  2. You can also grill the eggplant in the oven. Using the brush, brush the eggplant with some corn oil or olive oil, then put it in a medium-heated oven for about 10 minutes until it is cooked.
  3. You can also use free or low-fat yogurt, and you can also use low-fat mayonnaise.
  4. For more fiber, you can fry potatoes without peeling them.
  5. It is preferable that the salad be served immediately after distributing the sauce on it, but for pre-processing, you can put the pans in one dish, lettuce and vegetables in another dish, and the sauce in another dish, and leave it in the refrigerator for several hours, then when it is time to serve, mix the ingredients and then distribute the sauce over it.

  • 1 ½ Loaves bread. squared
  • 1 Large Eggplant unpeeled, cubed
  • 1 Large Potato peeled and cubed
  • 1 Medium Lettuce thin slices

  • 2 Medium Cucumbers thin slices
  • 1 ½ Cup Chickpeas boiled
  • 1 Small can Whole com seeds

The sauces

  • ½ Cup Yoghurt
  • ½ Cup Mayonnaise
  • 4 Large cloves Garlic minced
  • 1 Teaspoon Salt
  • ¼ Teaspoon White pepper
  • 2 Teaspoons Lemon juice
  • 1 Small Hot pepper chopped

For garnishing

  • 2 Teaspoons Sumac
  • 2 Tablespoons Parsley chopped

  • Corn oil

Instructions
