These tasty sheet pan chicken fajitas are a winner for a quick and adaptable weeknight supper or a quick and adaptable dish for company.

Fans of fajitas, unite! We can all agree that there’s something irresistible about juicy chicken breast and tender veggies, seasoned to perfection and ready for toppings. Even though our original chicken fajita recipe is a simple weekday dinner, we realized it was still taking longer than it required to. To create that perfect char, we used to marinate the meat for a long time and then cook it, along with the vegetables, separately in tiny batches.

However, and this is a major but, It just so happens that spreading the chicken and veggies out on a sheet pan, sprinkling it with a small lime juice and taco seasoning, and baking it is not only a lot easier, but it’s almost as tasty!

How To Make Sheet Pan Chicken Fajitas

These simple chicken fajitas are seasoned with our (nearly) world-famous homemade taco spice. Because fajitas aren’t really true Mexican cuisine—they’re more Tex-Mex—there’s a lot of opportunity for experimentation when it comes to creating a nice chicken fajita recipe. We recommend pre-making our taco seasoning in large batches and keeping it on hand for convenience. If you’re in a hurry, however, you may always buy it. Ingredients
  

  • chili powder about 2 tablespoons
  • 2 tablespoons cumin powder
  • 2 teaspoons oregano dried
  • 1 tsp paprika smoked
  • kosher salt and freshly ground black pepper To taste
  • 1 ½ pounds of chicken breasts boneless and skinless, cut into thin strips
  • 1 red bell pepper peeled and sliced into strips
  • 1 thinly sliced yellow bell pepper
  • 1 oz. orange bell pepper sliced
  • 1 red onion peeled and cut into wedges
  • 3 garlic cloves minced
  • 3 tablespoons extra virgin olive oil
  • ¼ cup fresh cilantro leaves chopped
  • 2 tbsp lime juice freshly squeezed
  • 6 warmed flour or corn tortillas 8 inches

Instructions
 

  • Preheat the oven to 425 degrees Fahrenheit. Coat a baking sheet with nonstick spray or lightly oil it.
  • Combine chili powder, cumin, oregano, paprika, 1 1/4 teaspoons salt, and 1 1/4 teaspoons pepper in a small bowl.
  • On the prepared baking sheet, arrange the chicken, bell peppers, onion, and garlic in a single layer. In a small mixing bowl, add the olive oil and chili powder combination; gently toss to blend.
  • Preheat the oven to 350°F and bake for 25 minutes, or until the chicken is fully cooked and the vegetables are crisp-tender. Add the cilantro and lime juice and mix well.
  • Serve with tortillas right away.
