Tandoori :

  • 2 cups Greek yogurt whole milk
  • 3 tbsp tandoori spice mix
  • 2 tbsp extra-virgin olive oil
  • ½ teaspoon crushed black pepper
  • ½ teaspoon crushed black pepper

  • 6 Skinless boneless chicken thighs
  • 1 Large or 2 Medium halved and thinly sliced zucchini
  • 1 Large sweet onion Vidalia onion, diced
  • 1 Small cauliflower head sliced into florets
  • 2 Yukon gold potatoes peeled and sliced into 1-inch cubes
  • ¼ Cup fresh cilantro chopped
  • 1 Lemon peeled and cut into wedges for serving


  • In a small bowl, combine Greek yogurt, tandoori seasoning, olive oil, salt, and pepper. Stir to combine, then spread it over the top of your chicken thighs using a pastry brush (reserve some marinade for the vegetables). Place the chicken on a baking sheet lined with aluminum foil.
  • Combine the zucchini, onion, cauliflower, and potatoes in a large mixing basin. Toss the remaining yogurt marinade and place it on the baking sheet with the chicken thighs. (If you run out of room, transfer the remaining vegetables to a second baking sheet.) Let’s take a seat for at least 30 minutes.
  • Preheat the oven to 400°F when ready. Cook for 25 minutes, rotating once halfway through (you can cook the other tray of vegetables at the same time).
  • Turn the broiler to high and cook the chicken and vegetables for 2–5 minutes, or until the top of the chicken browns (careful not to burn!). Serve with lemon wedges and fresh cilantro.


  • Boneless, skinless chicken thighs are a cost-effective poultry cut that will taste delicious even if the oven timer went off 5 minutes ago and you forgot to remove your chicken. I SAID THIGHS, I SAID TH Avoid the boneless, skinless chicken breasts unless you’re ready to keep a close eye on them while they’re cooking or you don’t mind eating sawdust.
  • Cauliflower, Brussels sprouts, and broccoli are hearty cruciferous veggies that work nicely in this recipe. Simply cut them into the same shape, and they’ll be ready in approximately 30 minutes. If you cut them up too small, the vegetables will shrivel and burn before the chicken is done cooking.
