Ingredients

  • 1 pound chuck meat Lean to the tune of 80% to 85%
  • kosher or sea salt to taste
  • freshly ground black pepper to taste
  • 4 slices of cheese American or Cheddar
  • 4 Burger Buns
  • Toppings Optional
  • condiments of choice ketchup, mustard, mayonnaise, etc. Lettuce, tomato, red onion, and pickles are examples of toppings.

Instructions

  • Season the ground chuck with salt and pepper in a medium mixing bowl. Gently incorporate the ingredients, but don't overwork the meat.
  • Make four equal chunks of the meat.
  • place One portion on a dish and gently press it into a 1-inch circular patty. (Don't make the patty too smooth; leave some rough edges and don't press it too flat.)
  • Press a "moat" around the circle of the burger with your thumb or fingers, about 14-12 inches from the edge – make sure the burger's edge is a bit higher than the indentation. This will guarantee that the burger flattens out while it cooks. Carry on in the same manner with each part.
  • Over medium/high heat, heat a large skillet.
  • When the pan is heated, gently lay the patties on the skillet, leaving some space between each burger (no need to grease the skillet).
  • Cook the burgers until they are beautifully seared on both sides and have browned halfway up.
  • Cook the burgers until they are done to your taste. (*NOTE: The FDA advises cooking burgers to an internal temperature of 160°F to ensure that all bacteria are eliminated.)
  • Remove the skillet from the heat and arrange the cheese on top of the burgers if using cheese. Cover the skillet and allow the cheese to melt from the residual heat/steam.
  • Serve with your favorite toppings on toasted buns.
  • Enjoy!
